Apple Cheddar Turkey Meatballs

I think my favorite substitute for beef in a lot of recipes is turkey. If we aren't making ground beef tacos my next go-to is ground turkey. I think it's because the ground turkey that I buy is a mix of both light and dark meat so it has a similar quality to ground beef. Ground turkey also goes better with certain ingredients like cheddar and apples. I don't know if this meatball would be the same with any other ground meat.
There's also something about turkey that seems to go with all of the good fall flavors like cranberries and apples. I like this meatball recipe since it's a really simple one to throw together when you are short on time. I'm a firm believer that I have enough meatball recipes that are quick and easy to make that you can make a homemade meal even when you feel like you've got no time. Ground meat is usually an affordable protein and as long as you have time to plan ahead a bit to have the ingredients on hand you could make meatballs for your loved ones every night.

Ingredients

  • 1 lb ground turkey
  • 1 cup plain breadcrumbs
  • 1 cup shredded green apple
  • 2 eggs
  • salt & pepper to taste
  • 22 cubes cheddar cheese

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • Take the meat mixture and flatten it in your hand. Take one of the cheddar cheese cubes and place it in the middle of the meat mixture. Gently wrap the meat around the cheese and roll it into the shape of a ball.

  • Place your meatballs on a greased baking sheet. Bake for 22 mins. Once cooked serve warm.
