Apple Pork Meatballs Stuffed with Gorgonzola

These are great for a fall potluck or if you're having adventurous guests over that are looking for an interesting and tasty meatball. These also work for any weeknight meal given you have a little extra time to squish some gorgonzola crumbles together to form little balls to stuff these meatballs with.
I'm a big fan of strong cheeses and fruit and the ground pork pairs well with both of these flavors. The fresh apples in the meat stay a little crunchy since the meatballs don't cook for too long which gives these meatballs an interesting texture with little bursts of apple flavor in every bite. The gorgonzola cheese is a nice, warm, tangy surprise when you bite into these balls - it hopefully is an unexpected and wonderful surprise for your guests. 
If you go to a lot of potlucks or work parties where everyone brings something to share this is a great meatball to bring to have something a little different on the table.

Ingredients

  • 1 lb ground pork
  • 1 cup plain breadcrumbs
  • 2 eggs
  • 3/4 cup green apple diced in small cubes
  • 21 balls gorgonzola cheese

Instructions

  • Preheat the oven to 350 degrees fahrenheit.
  • In a bowl combine ground meat, breadcrumbs, eggs, nd diced apples. Season to taste salt and pepper.
  • Take the meat mixture and flatten it in the palm of your hand. Take one of the gorgonzola balls and wrap the meat mixture around the cheese. Roll the meat mixture and cheese around in your hand delicately to form a ball - you want to make sure you don't squish the cheese into the meat.
  • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
