BBQ Bacon Blue Cheese Stuffed Meatballs

These are great for a Sunday funday when you have some friends over to watch the game, or they make an awesome weeknight meal as long as you have time to make the little blue cheese balls to stuff the meatballs with. You can serve these in a crockpot covered in your favorite BBQ sauce and let your guests help themselves to as many as they’d like by using toothpicks or tongs, or you can serve these little balls as a meatball sub as a main dish. They go great with a nice cold beer and your favorite potato chips or a nice light salad with even more blue cheese for the dressing. We like to use a BBQ sauce that has a little kick – I really love anything that’s good and spicy. You can top these with your favorite go-to BBQ sauce.

Ingredients

  • 1 lb ground beef
  • 1 cup plain breadcrumbs
  • 2 eggs
  • 10 strips bacon chopped
  • 18 balls blue cheese
  • Salt & Pepper to taste

Instructions

  • Preheat the oven to 350 degrees fahrenheit
  • In a bowl combine ground meat, breadcrumbs, eggs, and diced or crumbled bacon. Season to taste salt and pepper.
  • Take the meat mixture and flatten in the palm of your hand. Take one of the gorgonzola balls and wrap the meat mixture around the cheese. Roll the meat mixture and cheese around in your hand delicately to form a ball – you want to make sure you don’t squish the cheese into the meat.
  • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
