Blue Cheese Stuffed Buffalo Chicken Meatballs

I don’t know what it is about Buffalo Chicken but I absolutely love it, or maybe it's just the buffalo sauce. There is something that draws me to it on every menu that has it. There is this nice tanginess to a good buffalo sauce and the creamy blue cheese is such an amazing compliment. You can add butter or margarine to the buffalo sauce to tame it down to the level that you’re comfortable with. I personally love spicy food and I think that buffalo sauce has a really nice level of heat. It hits you right away but it doesn’t linger long.
These little blue cheese stuffed chicken meatballs are one of the ones that are on my list for potlucks, game day get-togethers, and of course my infamous meatball parties. These are great for those who don’t like or eat red meat. You can also make these little balls in advance and serve them in the buffalo sauce in a crockpot so your guests, friends, or loved ones can snack on them until they are gone. They are a great finger food and go really well with a good blue cheese dressing and celery to cool them down a bit.

Ingredients

  • Meatballs
  • 1 lb ground chicken
  • 1 cup Italian style breadcrumbs
  • 2 eggs
  • 1/2 cup buffalo sauce
  • 24 cubes of blue cheese
  • salt & pepper to taste
  • Buffalo Sauce
  • 1 1/2 cup buffalo sauce
  • 1 stick butter

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • Mix the ground chicken, breadcrumbs, eggs, buffalo sauce, salt & pepper in a bowl until they are well combined.
  • Take the blue cheese crumbles and smush them together to make 24 ½ inch balls. You should have some blue cheese leftover for some garnish but not a ton.
  • Take the meat mixture and flatten in the palm of your hand. Take one of the blue cheese balls and wrap the meat mixture around the cheese. Roll the meat mixture and cheese around in your hand to form a ball.
  • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
