Cheddar Stuffed Blueberry Turkey Wild Rice Meatballs

I'm always trying to come up with new and interesting meatballs and I think this one fits that category! I created this recipe during the fall into winter time. It seems like there are more recipes that I crave that can a little bit of fruit in them to create a pop of flavor. The dried blueberries definitely create that sensation in these meatballs. I love the tanginess of the cheddar cheese paired with the sweetness of the blueberries. The contrast of those flavors goes so well with the mild flavor of ground turkey.
These little balls are perfect for a quick weeknight meal that will be a little unexpected. I always like to have one night a week where I try something new for dinner that's even a little quirky like these meatballs. Whether it's new pairings or new spices, I think mixing it up during the week breaks up the week a bit.

Ingredients

  • 1 lb ground turkey
  • 1 cup plain bread crumbs
  • 2 eggs
  • 3/4 cup cooked wild rice
  • 1/4 cup dried blueberries
  • salt and pepper to taste
  • 24 cubes cheddar cheese

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Combine all your ingredients in a bowl, ground meat, breadcrumbs, eggs, blueberries, and wild rice. Season to taste with pepper.
  • Take a scoop of the meat mixture and flatten it in your hand. You'll need enough to wrap the meat mixture around the block of cheddar cheese.
  • Place one cube of cheddar cheese in the middle of the meat mixture and gently wrap the meat around the cheese, making sure it completely covers the cheese.
  • Place your meatballs on a greased baking sheet and place them in the oven. Bake for 22 mins.
  • Once they have finished baking you can place them on a paper towel for a minute to remove the excess grease.
  • You can serve these as they are with toothpicks, with a nice side salad or your favorite side dish. You can also keep them warm in a crockpot if traveling with these meatballs.
