Ingredients

  • 1 lb ground chicken
  • 1 cup italian style breadcrumbs
  • 1/2 cup finely chopped broccoli
  • 1/2 cup shredded cheddar cheese
  • 2 eggs
  • salt & pepper to taste
  • 25 cubes cheddar cheese

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • Mix the meat mixture together with the breadcrumbs, broccoli, shredded cheese, eggs, and salt and pepper in a large bowl
  • Take a scoop of the meat mixture and place it in the palm of your hand and flatten it out into a patty
  • Place a cheddar cheese cube in the middle of the patty and gently wrap the meat mixture around the cheese making sure it's completely covered
  • Place your meatball onto a greased cooking sheet
  • Bake the meatballs for 22 mins and serve warm
