Firecracker Pork Meatballs

I have a lot of recipes where ground pork is my choice of meat. I think it’s a great ground meat that has a better body and is similar to working with ground beef. It has a milder flavor which pairs well with certain sauces and there are also so many traditional pork dishes that I've turned into meatballs. If you're not a huge fan of pork or not a pork fan at all, you can use ground turkey or ground chicken as a substitute for any of my pork recipes. If you're not a fan of either of those go ahead and use beef for this recipe.
This recipe has become one of my favorites which is a little surprising to me. I am not really into sweet sauces on meat – but I love this sauce. It’s really easy to throw together and I think it hits on a couple of great notes, especially when using ground pork. It has a really nice heat from the buffalo sauce but I could eat just about anything with buffalo sauce. The spice in the buffalo sauce dissipates fairly quickly and it has a nice vinegar flavor as well which pairs nicely with the sweetness of the brown sugar. This is a great meatball to throw together for a spicy weeknight meal when you're short on time.

Ingredients

Meatballs

  • 1 lb ground pork
  • 1 cup Italian style breadcrumbs
  • 2 eggs
  • salt & pepper to taste

Firecracker Sauce

  • 1 cup buffalo sauce
  • 3/4 cup light brown sugar
  • 1 1/2 tbs apple cider vinegar
  • 1/2 tsp red pepper flakes or more to taste
  • salt & pepper to taste

Instructions

  • Preheat the oven to 350 degrees Fahrenheit
  • In a bowl combine ground meat, breadcrumbs, eggs and season to taste with salt and pepper.
  • Take a scoop of the meat mixture and form a ball in your hands by gently rolling the meat around.
  • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
  • While the meatballs are cooking you can make the sauce. In a small sauce pan add the buffalo sauce, brown sugar, apple cider vinegar, red pepper flakes and salt and pepper. Simmer to melt the brown sugar and keep warm to serve with the meatballs.
