My husband makes the best baked potatoes. I do most of the cooking in our house but one of the things I always have him make is the baked potato to go along with dinner. As for mashed potatoes, well, those are my jam. I make really good mashed potatoes which are what I use to recreate the essence of a loaded baked potato for this recipe. It's got all the wonderful things a good-loaded baked potato has, sour cream, cheese, and bacon - and depending on your particular tastes you can add scallions or jalapeños.I love making mashed potatoes and I also love coming up with different ways to make stuffed meatballs. I found out if I make little frozen mashed potato half rounds and add some frozen cheese to them I can make a really tasty meatball that reminds me of a loaded baked potato. These meatballs are so much fun to eat and also so much fun to make. The cheesy mashed potato stuffing is going to surprise your friends and family when they bite in.
In a bowl combine ground meat, breadcrumbs, eggs, crumbled bacon, and salt and pepper thoroughly.
Take the meat mixture and flatten it in your hand. Take one of the mashed potato pucks and to it with one of the cubes of frozen Velveeta Cheese and place it in the middle of the meat mixture. Gently wrap the meat around the mashed potato and cheese and roll it into the shape of a ball.
Place your meatballs on a greased baking sheet. Bake for 22 mins.
