Ingredients

Meatball Ingredients

  • 1 lb ground beef
  • ½ onion caramelized
  • ½ tbsp ground mustard
  • 1 cup toasted panko breadcrumbs
  • 2 eggs
  • salt and pepper to taste
  • 18 mashed potato pucks frozen

Mushroom Gravy Ingredients

  • 2 tbsp salted butter
  • 1 tbsp olive oil
  • 1 shallot finely chopped
  • 8 oz fresh mushrooms chopped
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • ¼ cup heavy cream
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste

Instructions

For the Meatballs

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a bowl combine ground beef, caramelized onions, ground mustard, breadcrumbs, eggs, and salt & pepper to taste.
  • Take a scoop of the meat mixture and flatten it in your hand.
  • Take one of the frozen mashed potato pucks and place it in the center of the meat mixture.
  • Wrap the meat mixture around the frozen mashed potatoes, making sure that the mashed potatoes are completely covered.
  • Place the meatballs on a foil-lined and greased baking sheet.
  • Bake for 23 mins and serve warm

For the Mushroom Gravy

  • Melt the butter and olive oil in a pan over medium-high heat
  • Add the shallots and cook until softened - about 2-4 mins
  • Add the mushrooms and cook until they have some brown color - about 6-8 mins
  • Add the garlic and saute for another 1-2 mins
  • Sprinkle the flour over the mushrooms making sure there are no lumps and the mushrooms are evenly coated. Cook for 2 mins to remove the raw flour taste
  • Gradually whisk in the beef broth
  • Add in the Worcestershire sauce to the thickened sauce
  • Finish the sauce with the heavy cream.
  • Keep warm until ready to serve over the meatballs
