Preheat the oven to 350 degrees Fahrenheit.
In a bowl combine ground beef, caramelized onions, ground mustard, breadcrumbs, eggs, and salt & pepper to taste.
Take a scoop of the meat mixture and flatten it in your hand.
Take one of the frozen mashed potato pucks and place it in the center of the meat mixture.
Wrap the meat mixture around the frozen mashed potatoes, making sure that the mashed potatoes are completely covered.
Place the meatballs on a foil-lined and greased baking sheet.
Bake for 23 mins and serve warm
