Honestly, what’s better than a home-cooked Thanksgiving Dinner? Well, a meatball that gives you all the amazing flavors of that special holiday meal! These meatballs include some of the expected sides and main dishes from my favorite holiday. I love food, I love to cook, and I love to feed people, so it’s no wonder that Thanksgiving is my favorite holiday. We normally have at least 20 people in the house for the event and it includes both sides of our family and a lot of times it includes additional members of our guest's family. We have a nice big kitchen that fits everyone and it’s the one time during the year when we all get together. I came up with these meatballs when I was first playing around with meatball ideas. I think it’s really fun to come up with recipes that remind you of a favorite dish or favorite holiday in one bite. These meatballs are like having the best leftover sandwich from your Thanksgiving feast in the form of a meatball. You can serve them over mashed potatoes or make little Thanksgiving Dinner meatball sliders to a homey dinner any night of the week.
Prepare stuffing as instructed on your favorite store-bought brand. You can always use leftover stuffing that you have from Thanksgiving as well for this recipe – or you can use my recipe here.
In a bowl combine ground meat, breadcrumbs, eggs, diced dried cranberries. Season to taste salt and pepper.
Take the meat mixture and and a little of the stuffing mixture – about 2 parts meat and 1 part stuffing and gently roll the meat and stuffing together – making sure to keep the meat and stuffing separate.
Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
