Chicken Meatballs in a Blue Cheese Cream Sauce

    I love a good meatball in a good cream sauce and this one is awesome. I’m also a sucker for blue cheese as you’ll probably see in a lot of my recipes. I know it’s a tough cheese for some but it’s one of my favorites to add to sauces and stuff meatballs with.

    Chicken Meatballs in a Blue Cheese Cream Sauce

    I really have a thing for blue cheese. I know it’s not everyone’s cup of tea – but I think it’s wonderful. It’s got such an amazing pungent flavor. If you browse around this site I think you’ll see that I use it in a couple of different recipes. This one is probably the only one I have right now that I use blue cheese on the outside of the meatball instead of the inside.
    Blue cheese goes so well with so many different things. It’s great on burgers, it makes an amazing salad dressing and it adds such a bite to so many dishes. I really like to use it in a cream sauce because it is a potent cheese so it makes a really flavorful sauce. I think the delicate flavor of the chicken meatballs really pairs well with the powerful blue cheese. You can serve these little meatballs over pasta as an option or you can serve them as an appetizer simmering in the sauce in a crockpot or on the stove and have folks pluck them out with toothpicks.

    Ingredients

    Meatballs

    • 1 lb ground chicken
    • 1 cup Italian Style breadcrumbs
    • 2 eggs
    • salt & pepper to taste

    Blue Cheese Cream Sauce

    • 1 1/2 cup heavy cream
    • 1 cup chicken stock
    • 10 oz blue cheese crumbles
    • 2 tbs sliced scallions
    • salt & pepper to taste

    Instructions

    • Preheat the oven to 350 degrees Fahrenheit
    • In a bowl combine ground meat, breadcrumbs, eggs and season to taste with salt and pepper.
    • Take a scoop of the meat mixture and form a ball in your hands by gently rolling the meat around.
    • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.
    • For the Blue Cheese Cream Sauce add the heavy cream, chicken stock, blue cheese crumbles and salt and pepper to a pan and heat on medium low until the cheese is melted.
    • Once the meatballs are cooked you can add them to the Blue Cheese Cream sauce to cover them. Add the scallions and the meatballs and the sauce and serve everything warm.

    This recipes is a great one if you need an good hearty meal but don’t want to take a lot of time cooking.  That’s the one thing I love about meatballs. They are really easy to throw together and they make an easy home cooked meal any night of the week. They cook quickly and since you can use tin foil on the baking sheet they are relatively easy to clean up after the cooking is done.  The sauce for this recipe comes together really quickly as well. That’s the nice thing about this one because it seems like a fancy meal that took longer than it actually did. One serving suggestion I have for this recipe is to serve them over simple spaghetti noodles. Cooking the noodles actually takes more time that getting the sauce pulled together.

    Chicken meatballs are a little different to work with than beef or pork meatballs. I’ve been making meatballs for years and trying to come up with different recipes for new and exciting meatballs. One thing I’ve played around with is the breadcrumb to meat ratio. There is always a temptation to add more breadcrumbs to chicken or turkey meatballs since the meat is so much leaner and stickier to work with. I have tested adding more breadcrumbs to the meat mixture for turkey and chicken meatballs and I never really liked the taste of them. They come out tasting too much like breadcrumbs and you lose the meat flavor. I know that having less breadcrumbs makes working with the meat mixture and rolling balls a little more difficult but I think the end result is totally worth it. You can always grease up your hands while rolling out these balls to make forming them go smoother. I use my handy cooking spray to coat my hands so the meatball mixture doesn’t stick. Also depending on the recipe I wash my hands in between rounds of meatball rolling. This helps depending on the recipe I’m working with. 

    It’s always fun to play around in the kitchen making meatballs. It’s also such a fun dish to serve others of make your family for dinner. I love the all of the possibilities that exist in one simple food. You can take the same base recipe and make it something different for every night of the week by just changing up the ingredients that you put in the meat mixture. You can also change things up every night by just adding these simple meatballs to your favorite sauce.

    I’ve been so inspired throughout my home cooking career by a good sauce. It can make or break a dish. I love learning new techniques and I love trying new things when it comes to making a sauce. Combining different flavors is another fun thing to play around with in the kitchen.

    This particular sauce is a really simple but awesome sauce that you can use for so many things. You can change up the flavors of the meatball and still use this sauce.
