    Italian Wedding Soup

    I’ve read that Italian Soup originated in Naples and that its original name is “minestra maritata” which means married soup, and that name refers to the marriage of ingredients in the soup. Traditionally the soup has consisted of leafy greens like swiss chard or kale and a rich meat broth with beef, ham hock, or beef. I’ve taken the concept of marrying the ingredients and added the more Americanized version that includes meatballs. One extra step I take in making my Italian Wedding Soup is to toast my pasta before cooking it. You can either do this in the oven on a sheet pan or in a sauté pan on the stovetop. You need to pay attention to the pasta and make sure the pan isn’t too hot and stir it constantly so it doesn’t burn.

    I also tend to use fresh spinach in this recipe instead of the swiss chard or kale. I will admit that there are times that I add collard greens instead of spinach since I’m a sucker for that in soup. I also add in some additional vegetables to sneak in some more nutrients.

    Beef Meatballs in a Jalapeño Cheese Sauce

    Who doesn’t love a good spicy cheese sauce?! You can take my Basic Beef Meatballs and cover them in spicy cheese for a great game night appetizer or one of the best cheesy meatball subs you’ve ever had. We love a good cheese sauce in my house and have a unhealthy relationship with spicy food. One of my favorite things is to see how much spice I can handle. This recipe is pretty mild given that I use jalapeño’s – it’s a good spicy pepper but it’s not too bad.

    This recipe was actually inspired after a night out over at a friends house. Their go-to recipe for Macaroni and Cheese has jalapeño’s in it. I thought that was a great idea for a quick and easy meatball recipe. The Basic Beef Meatballs that I have are really easy to throw together and the jalapeño cheddar sauce is something that you can whip together while the meatballs are cooking.

    Lasagna Soup with Meatballs

    We love lasagna – I mean who doesn’t?! For some reason I always feel like it’s a really time consuming dish to throw together. I do feel like I make a complicated one at times. Mine takes a lot of steps because I love add spinach and sautéed mushrooms, garlic and onions to my ricotta and cottage cheese mixture. I came up with this soup recipe because it’s got all the great lasagna flavors and I feel like it takes a lot less time to get together for dinner.

    I also love making meatballs and I think they’re a great addition to this soup. It helps give this dish the heartiness that we expect from a good lasagna. One of my favorite things about this recipe besides the little soup meatballs is the flavorful broth and I absolutely love ricotta cheese. It’s fun to add some healthy dollops of cool ricotta on top of this hot soup for a little contrast of temperatures.

    Basic Chicken Meatballs

    My Basic Chicken Meatball recipe is a great thing to bookmark for so many occasions. They are very versatile and are also a great substitute for any meatball recipe that calls for beef, especially if you’re trying to cut down on red meat. If you just want to make these to have a quick weeknight meal you can serve them as little sliders with each one of your family member’s favorite condiment. You can serve them on toothpicks too with everyone’s favorite dipping sauce.

    This base recipe has so many different applications and are really easy to throw together. This is the base recipe I use for a lot of my chicken meatballs. You can always make these more of your own by adding your favorite spices or that secret family blend you use that everyone asks you the recipe for. Chicken meatballs are a family favorite – even for those picky eaters.

    Firecracker Pork Meatballs

    I’m a sucker for spicy food and this one was a recipe that I’ve been working on for a bit. I was turned onto Firecracker type recipes after finding some recipes on Pinterest and I thought that it would make a perfect meatball. I know I’ve mentioned in other posts about how much I love buffalo sauce and buffalo chicken anything and that was a part of the inspiration for this meatball. For this recipe I think pork is a better ground meat choice because I think it holds up to the sweet buffalo sauce better than chicken.

    This one falls under the easy to make meatballs and the meatballs that travel well. It’s a great meatball to serve while playing cards or dominos with your friends straight out of a crockpot or you can make a meal out of these spicy little pork balls by serving them over rice. They use my Basic Pork Meatball recipe that is a simple meatball base to throw together and the sweet and spicy sauce is a quick and simple sauce to make while your meatballs are in the oven.
