    I love stuffing balls!! I choose a variety of ingredients to stuff my balls with whether it’s cheese, mashed potatoes, chili, mac & cheese – really the possibilities are endless. You can find all my stuffed meatballs below and we’re adding more day by day!

    Stuffed Meatballs

    I think that Stuffed Meatballs are my favorite. They are the ones that I tend to make when I need a unique and tasty potluck dish. I also find them a little more challenging in a lot of ways than the other meatballs on this site. Trying to come up with creative recipes that also work every time is one of my favorite things to do. 

    These meatballs are stuffed with a variety of things from simple cheese stuffed meatballs to more involved mashed potato stuffing or meatballs stuffed with sloppy joes. I try to push the limits on what you’ll find inside of the little balls with everyone of my recipes. It’s like a hidden surprise for your family or guests when they cut into the meatball!

    Beef Stroganoff Meatballs Stuffed with Swiss Cheese

    Beef stroganoff is such a classic comfort food in our house. It’s something that I’ve made for many years before I started this meatball obsession. It’s a pretty simple thing to make and it has a couple different variations depending on the recipe you find on the internet. I know there are some recipes out there that use ground meat in the mushroom sour cream sauce instead of pieces of sautéed beef so I think it’s a fitting candidate for meatballs. I add swiss cheese to my meatballs for a little something extra but if you’d like you can skip that step. This recipe is loaded with mushrooms so if you are a mushroom lover this is the recipe for you.

    You can serve these in the more traditional way by serving them over your favorite egg noodle or you can try something a little different but just a cozy by serving them over mashed potatoes. No matter how you serve them I’m sure they’ll be a family favorite after the first time you make them.

    Blue Cheese Stuffed Buffalo Chicken Meatballs

    I don’t know what it is about Buffalo Chicken but I absolutely love it. There is something that draws me to it on every menu that has it. There is a nice tanginess to a good buffalo sauce and the creamy blue cheese is such an amazing compliment. You can add butter or margarine to the buffalo sauce to tame it down to the level that you’re comfortable with. I personally love spicy food and I think that buffalo sauce has a really nice level of heat. It hits you right away but it doesn’t linger long.

    These little blue cheese stuffed chicken meatballs are one of the ones that are on my list for potlucks, game day get-togethers, and of course my infamous meatball parties. These are great for those who don’t like red meat or don’t eat red meat. You can also make these little balls in advance and serve them in the buffalo sauce in a crockpot so your guests, friends, or loved ones can snack on them until they are gone.

    Stuffed Pepper Meatballs

    Stuffed peppers seem to be a staple in our house in the fall and winter months – so in Minnesota, that means most of the year! I have many variations on how I make stuffed peppers and they are awesome as leftovers. These meatballs are the best of the best of my stuffed peppers in meatball form. For a little kick, I like to stuff these balls with pepper jack cheese – or for a little more heat you can always use habanero jack cheese. I also sauté the peppers and onions before adding them to the meatball to get that wonderful pepper flavor and also keeping them nice and soft.

    These are a great meatball for weeknight meals or weekend events. The rice gives these meatballs a little extra body and different texture, it also sneaks in more of those carbs that we all really love. The pepper jack cheese gives this meatball recipe a little kick of heat and the provolone on top just adds to the cheesiness we all love in a good stuffed peppe.

    My Sloppy Joe Stuffed Meatballs

    Sloppy Joe’s aren’t one of those things I make too often but when I do I make them from “scratch”, meaning I make my own Sloppy Joe sauce without using packets or cans of Manwich. I like to play around with different ingredients when I make Sloppy Joe’s so you’ll probably be seeing a lot more Sloppy Joe stuffed meatballs on this site. I do have a couple other recipes that I’ve made using other people’s go-to recipes. I have to say everyone one of my Sloppy Joe stuffed meatballs are great in their own way.

    My recipe has diced fresh sweet peppers and onions in the mix. I like to think I’m sneaking in a little nutrition into the dish by adding some veggies. I really love the sweet pops you get from the peppers in this recipe. These meatballs are great served as sliders or you can pop them into a warming dish or crockpot and take them to your next family gathering or potluck and eat them with a fork and knife.

    Jalapeño Popper Meatballs

    This recipe is one of the more interesting and unexpected ones that I’ve come up with. We love Jalapeño Poppers and I really wanted to make a meatball that has all the components of a Jalapeño Popper. When thinking about how to do this I thought about maybe adding jalapeños to the meat, adding a frozen bit of cream cheese to the middle of the meatball, and knew that I would need to wrap them in bacon. With this recipe I ended up with the idea of having the jalapeño and cream cheese be the stuffing and wrapping the hamburger in bacon. It’s kind of like a Jalapeño Popper bite sized burger.I was really surprised that on my first try these little meatballs turned out exactly the way that I imagined them. The jalapeño has a good bite to it and the cream cheese is good and melty – just like a good Jalapeño Popper.

    I have brought these to countless potlucks and I get tons of compliments on them. I think they are a surprise and delight a lot of folks! I know a lot of people aren’t expecting to find a jalapeño stuffed with cream cheese inside a meatball!
