Cheddar Stuffed Chicken Broccoli Meatballs
Ingredients
- 1 lb ground chicken
- 1 cup italian style breadcrumbs
- 1/2 cup finely chopped broccoli
- 1/2 cup shredded cheddar cheese
- 2 eggs
- salt & pepper to taste
- 25 cubes cheddar cheese
Instructions
- Preheat the oven to 350 degrees Fahrenheit
- Mix the meat mixture together with the breadcrumbs, broccoli, shredded cheese, eggs, and salt and pepper in a large bowl
- Take a scoop of the meat mixture and place it in the palm of your hand and flatten it out into a patty
- Place a cheddar cheese cube in the middle of the patty and gently wrap the meat mixture around the cheese making sure it's completely covered
- Place your meatball onto a greased cooking sheet
- Bake the meatballs for 22 mins and serve warm

This recipe was inspired by broccoli cheddar soup. I don’t know what made me think of it one day but I was like “I should turn that into a meatball!” I also decided that since everything is better with cheese I should add not only add shredded cheddar cheese to the meat mixture but I should also stuff these meatballs with a cube of cheddar cheese. This way you get the full effect of the cheese in every bite!
