Mashed Potato Stuffed Meatballs in a Mushroom Gravy

Mashed Potato Stuffed Meatballs in a Mushroom Gravy
Ingredients
Meatball Ingredients
- 1 lb ground beef
- ½ onion caramelized
- ½ tbsp ground mustard
- 1 cup toasted panko breadcrumbs
- 2 eggs
- salt and pepper to taste
- 18 mashed potato pucks frozen
Mushroom Gravy Ingredients
- 2 tbsp salted butter
- 1 tbsp olive oil
- 1 shallot finely chopped
- 8 oz fresh mushrooms chopped
- 2 cloves garlic minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- ¼ cup heavy cream
- 1 tbsp Worcestershire sauce
- salt and pepper to taste
Instructions
For the Meatballs
- Preheat the oven to 350 degrees Fahrenheit.
- In a bowl combine ground beef, caramelized onions, ground mustard, breadcrumbs, eggs, and salt & pepper to taste.
- Take a scoop of the meat mixture and flatten it in your hand.
- Take one of the frozen mashed potato pucks and place it in the center of the meat mixture.
- Wrap the meat mixture around the frozen mashed potatoes, making sure that the mashed potatoes are completely covered.
- Place the meatballs on a foil-lined and greased baking sheet.
- Bake for 23 mins and serve warm
For the Mushroom Gravy
- Melt the butter and olive oil in a pan over medium-high heat
- Add the shallots and cook until softened - about 2-4 mins
- Add the mushrooms and cook until they have some brown color - about 6-8 mins
- Add the garlic and saute for another 1-2 mins
- Sprinkle the flour over the mushrooms making sure there are no lumps and the mushrooms are evenly coated. Cook for 2 mins to remove the raw flour taste
- Gradually whisk in the beef broth
- Add in the Worcestershire sauce to the thickened sauce
- Finish the sauce with the heavy cream.
- Keep warm until ready to serve over the meatballs

Mashed potatoes are a family favorite, and I think that most midwestern families would agree that they are one of the many comfort foods that appear regularly on the dinner table - especially during the winter months. Creamy, buttery, and perfectly satisfying, mashed potatoes are the ultimate side dish for cozy dinners, particularly during the colder winter months. Whether served alongside a roast, topped with gravy, or even as a filling for creative recipes like stuffed meatballs, mashed potatoes bring warmth and nostalgia to the dinner table.
I first stuffed a meatball with mashed potatoes for my Cottage Pie Meatballs recipe. I thought it would be a creative way to rethink the classic dish of Cottage Pie by turning them into meatballs. Instead of placing beef meatballs over mashed potatoes, I decided to stuff the meatballs with mashed potatoes instead.

I use silicon molds to make the mashed potato filling. I found these on Amazon and ordered them in a variety of sizes. I tend to use the smaller sized ones for most of my soft fillings. You need to freeze the mashed potatoes so you can successfully use it as the filling for a meatball. Without freezing you'd never be able to get the mashed potatoes to hold their shape inside the meatball. The meat and potatoes would basically become one and that's not what we're going for here.

For this recipe you can use one half circle of the frozen mashed potatoes or use a full circle of the frozen mashed potatoes. Just keep in mind that if you use the full circle or two of the little mashed potato pucks, your meatballs will turn out larger and you will have less of them. If you need to serve more people and would like to use more potato filling I would suggest doubling the recipe.
Just for fun in this recipe I served the meatballs on top of a baked potato. If you live in the Midwest I feel like you can never have too many carbs and there can never be too much potato on any dish. You can garnish these meatballs with come scallions or fresh parsley when you serve them.
