For this recipe I paired the meatballs with a roasted red pepper sauce. Roasted red pepper sauce is a versatile and flavorful addition to a variety of dishes, from pasta and meatballs to grilled vegetables and sandwiches. You can easily make this rich and smoky sauce using jarred roasted red peppers, which are conveniently available in most grocery stores and save time without sacrificing flavor.

For a homemade touch, you can roast fresh red bell peppers at home by charring them over an open flame, broiling them in the oven, or grilling them until their skins are blistered and blackened. Once cooled, peel off the skins and blend the roasted peppers with garlic, olive oil, a splash of cream, or a hint of spice for a silky, vibrant sauce. You can also add some parmesan cheese to the sauce for a little nuttiness. Whether store-bought or homemade, roasted red pepper sauce is an easy way to add depth and a burst of color to your meals.

Pepper Jack Stuffed Cajun Meatballs are also incredibly versatile and easy to make. The spice level can be adjusted to suit your preferences—add extra cayenne for more heat or tone it down for a milder option. You can use your favorite Cajun spice from the store as well.

For this recipe I decided to use Jimmy Dean's Hot Sausage because it's a staple in my house. I love having it in the freezer for a quick meatball recipe or a spicy soup that I can throw together with anything I have in the fridge. It thaws and cooks quickly and has a great texture for meatballs, casseroles, and soups. You can use ground beef if you have that on hand, ground pork works great as well. For a lighter version you can substitute ground turkey or ground chicken as well.

Whether you’re hosting a party, looking for a creative dinner idea, or just craving something with a little kick, Pepper Jack Stuffed Cajun Meatballs are a crowd-pleasing recipe that’s sure to impress. Their combination of spicy, cheesy, and savory flavors makes them a standout dish that’s perfect for any occasion. Serve them with toothpicks for an easy appetizer or plate them with your favorite sides for a meal that’s as fun to eat as it is flavorful.
