Loaded Baked Potato Meatballs
I love baked potatoes because really what’s not to love about a good baked potato loaded with butter, cheese and sour cream. This is the reason that I turned one of my favorite foods into another one of my favorite foods – a meatball.
Loaded Baked Potato Meatballs
Ingredients
- 1 lb ground beef
- 1 cup plain breadcrumbs
- 10 strips bacon
- 2 eggs
- 19 cubes frozen Velveeta Cheese
- 19 frozen mashed potato pucks
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a bowl combine ground meat, breadcrumbs, eggs, crumbled bacon, and salt and pepper thoroughly.
- Take the meat mixture and flatten it in your hand. Take one of the mashed potato pucks and to it with one of the cubes of frozen Velveeta Cheese and place it in the middle of the meat mixture. Gently wrap the meat around the mashed potato and cheese and roll it into the shape of a ball.
- Place your meatballs on a greased baking sheet. Bake for 22 mins.
I’ve been having a lot of fun with meatball stuffing since I got my silicone molds – they have opened so many new doors to what I can use inside my meatballs. Mashed potatoes are one of my new favorite things to stuff a meatball with. It’s so fun to serve your friends or family meatballs with interesting surprises inside. These loaded baked potato meatballs are a cool meatballs that will definitely surprise the folks you are feeding. This recipe has it all – bacon, mashed potatoes, cheese and if you top them with sour cream and chives you get the meaty feeling of a loaded baked potato in one bite.
I really love the addition of bacon in the meat mixture for this recipe. It adds a nice amount of salt and a good smokiness to the meatball. I’m a sucker for good mashed potatoes and then throw in some melty cheese – you can’t ask for a better combinations. The cool thing about this recipe is that after you throw the meatball together you can add whatever condiments you love on these little balls to make the ultimate loaded baked potato that is perfect for you.
This recipe does require some planning ahead since the mashed potatoes and the cheese are frozen before stuffing the meat. I like to make mashed potatoes as a side dish for dinner and I have a problem with making way too much food for two people, so I use leftovers for this recipe when I’m putting everything away. I make little frozen half circle potato pucks and keep them in a plastic zip bag in the freezer for any time that I get a bug to make some stuffed meatballs. I do the same thing with the frozen Velveeta cubes. I buy a block of cheese and cut it up into cubes and freeze it on a baking sheet. Once they are frozen I put a little flour in a plastic zip bag and add the cheese and shake it to coat the cheese with flour so they don’t stick together.
If you make the mashed potatoes and have the little mashed potato bites frozen before hand, this recipe goes pretty quick. It’s really easy to throw the meat mixture together and wrap it around the mashed potatoes and cheese. I think that meatballs are a pretty easy and quick thing to throw together for any event, whether you’re looking for something different to make for dinner or if you need something to bring to a family gathering or a friends party. I really like this recipe because it’s really unexpected. It’s always fun to bring a dish to share the people at the party keep talking about. This recipe packs a good punch with the bacon in the meat and the cheese potatoes inside.
There are so many things you can top these meatballs with to personalize these to your specific tastes. Some suggestions are sour cream and scallions as some of the more traditional loaded baked potato toppings. You can serve these with your favorite nacho cheese sauce for your guests to dip the loaded balls in and throw in some fresh or pickled jalapeños for a little kick of heat. I’m a huge fan of spicy foods and jalapeños have the perfect amount of spice and flavor that compliment these stuffed balls.
