Blue Cheese Stuffed Buffalo Chicken Meatballs

    I love buffalo chicken salads and buffalo chicken wraps! They are my weird comfort food I think mainly because I love anything spicy, buffalo sauce is amazing and I love a good blue cheese. With that passion this meatball was born!

    Blue Cheese Stuffed Buffalo Chicken Meatballs

    I don’t know what it is about Buffalo Chicken but I absolutely love it, or maybe it's just the buffalo sauce. There is something that draws me to it on every menu that has it. There is this nice tanginess to a good buffalo sauce and the creamy blue cheese is such an amazing compliment. You can add butter or margarine to the buffalo sauce to tame it down to the level that you’re comfortable with. I personally love spicy food and I think that buffalo sauce has a really nice level of heat. It hits you right away but it doesn’t linger long.
    These little blue cheese stuffed chicken meatballs are one of the ones that are on my list for potlucks, game day get-togethers, and of course my infamous meatball parties. These are great for those who don’t like or eat red meat. You can also make these little balls in advance and serve them in the buffalo sauce in a crockpot so your guests, friends, or loved ones can snack on them until they are gone. They are a great finger food and go really well with a good blue cheese dressing and celery to cool them down a bit.

    Ingredients

    • Meatballs
    • 1 lb ground chicken
    • 1 cup Italian style breadcrumbs
    • 2 eggs
    • 1/2 cup buffalo sauce
    • 24 cubes of blue cheese
    • salt & pepper to taste
    • Buffalo Sauce
    • 1 1/2 cup buffalo sauce
    • 1 stick butter

    Instructions

    • Preheat the oven to 350 degrees Fahrenheit
    • Mix the ground chicken, breadcrumbs, eggs, buffalo sauce, salt & pepper in a bowl until they are well combined.
    • Take the blue cheese crumbles and smush them together to make 24 ½ inch balls. You should have some blue cheese leftover for some garnish but not a ton.
    • Take the meat mixture and flatten in the palm of your hand. Take one of the blue cheese balls and wrap the meat mixture around the cheese. Roll the meat mixture and cheese around in your hand to form a ball.
    • Place your meatballs on a greased baking sheet and place in the oven. Bake for 22 mins.

    Working with ground chicken is a little different than working with ground beef. It’s a leaner meat so it’s a little looser and a little stickier than ground beef. A helpful tip when working with ground chicken and ground turkey for that matter is to make sure the meat is cold. The colder the meat the easier it is to work with. The same goes for some of the softer cheeses that I stuff my meatballs with. These are best when made in advance and allowed to cool off either in the fridge or freezer before stuffing the meatballs with them. 

    I like to give some little tips that hopefully help you make some of my recipes a little easier. I also like to include some of the things I’ve learned over the many years of making meatballs to help make these recipes more successful. It’s nice to know what you’re getting yourself into and help prep to make some of these recipes less time consuming and it also allows you to almost meal prep some of the ingredients needed so you can whip through them with ease.

    Once you have all of your ingredients well mixed you can flatten out the mixture so you can place a ball of blue cheese in the middle and roll the meat around the cheese until you have a nice little ball. I use my vast knowledge of making meatballs to get the right amount of meat mixture for each meatball. I’ve been making meatballs and stuffed meatballs for years so I kind of go by feel on how much meat to use. You can get those handy meatballers or meatball scoops to help make the meatballs a consistent size. One of the biggest things is to make sure you have enough meat to cover the cheese well.  I place mine on a foil lined baking sheet with a little cooking spray to help them not stick and for faster cleanup.

    I don’t know what it is about this particular meatball but it’s definitely one of the ones that come to mind any time I need a different dinner idea or I need something fun to bring to someone’s house to share. It’s a recipe that you don’t find others making so there’s a good chance that you will be the only one showing up with this one.

    For these blue cheese stuffed buffalo chicken meatballs it’s helpful to have some cooking spray handy to coat your hands with before starting to roll out these meatballs. Chicken and the leaner meats like turkey tend to stick to your hands as you’re making meatballs and adding a little cooking spray or even cooking oil to help have the meatball mixture not stick to your hands as you roll out all of the meatballs. This makes this recipe go quicker and it makes the whole process a little cleaner.
